How to prepare green tea

A few days ago I posted a post about the benefits of green tea, and many of those who read it asked me how it is prepared.

I am a fervent drinker of infusions (right now, while I prepare this one, I am having one called Golden Flowers, from Pure Tea), but I do not consider myself an expert in cooking times, of rest, so I have looked for in different places information on how to properly prepare a green tea. I hope that it helps those interested.

1. The first source in which I have searched has been the book Anti Cancer, by Dr. David Servan-Schreiber who, after talking about the benefits of this herb, explains how to get the most out of it: “Leave 2 g. of green tea for ten minutes in a teapot, and drink no later than one hour. Drink six cups a day. Do not save green tea for later, since in a matter of a couple of hours it has lost all its beneficial polyphenols.

2. I have also found an interesting analysis of green tea in Consumer magazine, in which it recommends the following: “Green tea catechins are soluble in water, and the degree of extraction depends on the contact time of the leaves in water. . Therefore, to make the most of the properties of any tea, it is best to make a long infusion, of five or ten minutes”.

How to make green tea

He recommends using mineral water, and that it does not come to a boil, since the infusion would be too bitter: "The tea should be poured into the teapot with the leaves just before it starts to boil, or in case it has reached the boiling point, it must be allowed to cool for a moment before pouring them”.

He also recommends about 2 grams per cup and letting them rest in water for at least 1 to 3 minutes so that the aromas unfold, although they can be left to infuse for up to 5 minutes. Of course, it must be taken into account that "the longer they are left to rest, the more pronounced the bitter taste will be."

If you are one of those who do not like the taste of green tea (although within this type of tea, there are many varieties, with more or less intense flavors), you can add a little sugar, honey, agave, lemon or a splash of milk

However, the less time you let it sit, the milder it will taste.
